Easy Peasy Pasta (Macaroni with onion, capsicum & scrambled egg)

‘Easy Peasy Pasta’ is the recipe when pasta can be done in a jiffy still makes all happy. Whenever I am not in a slightest of mood to prepare a full-fledged dinner, I opt for this Easy Peasy one. Simply boil the noodles and fry it with vegetables. Add some herbs, scrambled egg and cheese to lift the taste of the dish. If you are not eggetarian, happily skip the egg part. Critics can raise their eyebrows, but I love this Easy Peasy Pasta.  

Among different type of noodles for the pasta, I prefer macaroni which cook a bit faster than other variants. You can use any type of your choice. This dish is ideal for breakfast also.

Ingredients to serve 2 :

  1. Dried macaroni – 175 gm.
  2. Onion – 2 (large)
  3. Capsicum – 1 (large)
  4. Garlic – 2 cloves (large)
  5. Egg – 2
  6. Tomato sauce – 2 tbspoon
  7. Dried oregano – ½ teaspoon
  8. Dried basil – ½ teaspoon
  9. Olive oil – 3 + ½ tbspoon
  10. Salt to taste
  11. Black pepper powder – ½ teaspoon
  12. Grated cheese – 3 tbspoon

Procedure :

  • At first, boil sufficient amount of water in a large pan. Add some salt and ½ tbspoon of olive oil into it. Cook the macaroni in this boiling salted water until tender but still firm to bite. Drain the pasta and keep aside.
  • While the pasta is cooking, by that time roughly chop the onions. Cut the capsicum into medium dices. Peel the garlic cloves and finely chop them.  
  • Beat the eggs with little salt and keep aside.
  • Now heat 1 tbspoon of olive oil in a large frying pan over medium heat. Spread the beaten eggs over the hot pan. Using a spatula break the eggs into small pieces and fry well. Transfer the scrambled egg into a separate dish and keep aside.
  • Then heat remaining 2 tbspoon of olive oil in the frying pan.
  • Add chopped garlic and sauté for a while. Then add chopped onion and capsicum and fry till they become soft.
  • After that add tomato sauce, dry oregano and dry basil. Give them a good stir and cook for a minute.
  • Then add boiled pasta and toss well with the vegetables. Fry for 1-2 minutes.
  • Finally add scrambled egg, black pepper powder and 2 tbspoon of grated cheese. Mix all the ingredients very well and switch off the gas.
  • Transfer the pasta in a serving bowl and top with 1 tbspoon of grated cheese.
  • Serve hot with some extra cheese.

Note :

  1. You can add chilly flakes also. I didn’t have it so I skipped.
  2. You can add more vegetables of your choice like carrot, mushroom etc.
