Cauliflower is one of my favourite vegetables. I generally used to make a simple curry with potato and cauliflower which can be found here ‘

‘. Cauliflower seamlessly suits well in various dishes, for example lentils, mixed veg and even in fish curries. However, when I wish to make a rich dish out of it, I go for ‘Cauliflower Roast‘ which is a spicy preparation indeed. Even one can draw some similarity of its recipe with the following non-vegie as given here ‘

‘. This dish is in that sense a bit experimental and perhaps elevates the good old run of the mill cauliflower to a new high.
Ingredients to serve 4 :
- Cauliflower – 1 (medium size)
- Potato – 2-3 (medium size)
- Onion – 2 (large)
- Ginger paste – 1 teaspoon heaped
- Garlic paste – 1 teaspoon
- Chopped tomato – 1 (large)
- Slit green chilli – 2-3
- Chopped fresh coriander leaves – 3 tbspoon
- Cumin seed – ½ teaspoon
- Bay leaf – 2
- Whole garam masala (cinnamon stick – ½ inch, clove – 3, green cardamom – 3)
- Salt to taste
- Turmeric powder – ½ teaspoon
- Red chilli powder – ½ teaspoon
- Mustard oil – ½ cup
Procedure :
Cut the cauliflower into medium size florets.
Peel and cut each potato into 4 pieces.
Cut the onion into thin slices.
Wash the vegetables and keep aside.
Heat oil in a pressure cooker over medium heat.
Fry cauliflower florets and potato cubes into it for 2-3 minutes. Add some salt and ¼ teaspoon of turmeric powder while frying the vegetables. Remove them from oil and keep aside.
Now add cumin seeds, whole garam masala and bay leaf into the remaining hot oil, saute for a while.
Then add garlic paste and fry till it starts changing colour.
Now add onion and fry till it gets translucent.
Then add ginger paste and cook till onion gets light brown.
Now add tomato and green chilli, cook till tomato gets soft.
Add remaining turmeric powder and red chilli powder, mix them well and cook till oil comes out from the mixture.
Then add fried vegetables and mix the masala with it.
Cook for 1 minute and then add 2 cups of water into it.
As the water starts boiling add salt and put the lid of the pressure cooker.
Put the flame on low-medium and cook upto 1-2 whistle.
After releasing the pressure of the cooker, remove the lid and sprinkle over the coriander leaves.
Serve with rice or roti or paratha.
