I recall to share with you the yummiest carrot desert ever i.e. Gajorer Halua or Carrot Halwa. Now, this is time to go the extra mile from where we left and make laddoos out of carrot-coconut blend. Perfectly round, super smooth and generously sweet, Gajar Naryal balls are sheer treat and irresistible too. Indeed winter with carrots is a bliss. Happy Valentines day.
Ingredients for 20 – 24 pieces :
- Carrot – 3-4
- Grated coconut – ½
- Milk powder – 8-10 tbspoon
- Condensed milk – 200 gm.
- Sugar – 2 tbspoon
- Chopped cashew nut – 2-3 tbspoon
- Raisins – 2-3 tbspoon
- Cinnamon – 1 inch piece
- Ghee/Clarified butter – 5 tbspoon
Procedure :
Wash and peel the carrot. Cut them into big chunks. Boil the carrot chunks into sufficient amount of water along with the piece of cinnamon. As the carrot gets cooked remove them from water and keep them aside.
Melt 1 tbspoon ghee in a non-stick pan over low-medium heat. Cook grated coconut with 4 tbspoon of milk powder and sugar for 3-4 minutes.
Now put the boiled carrots and coconut mixture in a mixer and grind them to a together.
Now melt remaining ghee in the non-stick pan over medium heat. Add the mixture of carrot and coconut, cook for couple of minutes. Then add 4 tbspoon of milk powder and the condensed milk, mix them well. Cook till the mixture starts leaving the pan. Mix cashew and raisins and then put off the gas. Transfer the mixture to a dish and let it cool down a bit.
Grease your hand with ghee and start making small balls or ‘laddus’ with the warm carrot-coconut mixture.
Spread the remaining milk powder in a plate and roll the ‘laddus’ in it to give the ‘laddus’ a nice coating of milk powder.
Note : You can use ‘khyoa’ or ‘mawa’ instead of milk powder.
