Watermelon is my favourite summer fruit after Mango and Lichi. I can in fact eat a whole bowl of watermelon in one go. I do not really need any fancy exquisite dressing for this fruit. However occasionally it is not unfair to pamper ourselves with a glass of vibrant coloured juice that too flavoured with mint and lemon.

Ingredients to serve 2 :
- Half of a 2 kg. Watermelon
- 2 medium sized lime
- 15 – 20 fresh mint leaves
- ½ teaspoon of black salt (bit nun)
- 10 – 12 ice cubes
Procedure :
- At first remove the skin of the watermelon and then cut it into mini chunks. Try to discard the seeds as many as possible.
- Then transfer the watermelon chunks in a blender. After blending well pass the liquid through a strainer and collect the juice.
- Now wash the limes. Slice two lime rings for garnishing. Then cut the remaining limes into small pieces.
- Wash the mint leaves well.
- Now crush the lime pieces and mint leaves in a mortar and pestle.
- Finally add quarter teaspoon of black salt in two serving glass. Divide the lime and mint mixture in two glasses equally. Add 5-6 ice cubes in each glass. Pour half of the watermelon juice in each glass. Stir all the ingredients well with a spoon.
- Now garnish the juice with mint leave and lime slice. The watermelon juice is now ready to serve.
Note :
- Adjust the amount of salt, lime and mint leaves according to your taste.
- One can also add a bit of sugar if the watermelon is not that sweet in taste.
