Apple & Cinnamon Muffins

Apples although being healthy, are not among my favourite fruits. As a result, few of them were left in my fruit basket for long. To finish them off, I thought of an idea to transform them into baked apple in the form of muffins. As an add on, caramelized sugar topping mingled with the flavour of cinnamon enhanced the test many folds.  A must try for those who don’t like apple just like me, however equally passionate to bake 🙂

Apple & Cinnamon Muffins

Ingredients to serve 6:

  1. Plain flour – 155 gm.
  2. Baking powder – 1½ teaspoon
  3. Pinch of salt
  4. Ground cinnamon – 1 teaspoon
  5. Golden castor sugar – 40 gm.
  6. Small eating apple (peeled, cored and finely chopped) – 2
  7. Milk – 125 ml.
  8. Egg (beaten) – 1
  9. Butter (melted) – 4 tbspoon

For topping:

  1. Golden castor sugar – 3 tbspoon
  2. Butter (soften) – 2 tbspoon
  3. Plain flour – 1 tbspoon
  4. Ground cinnamon – ½ teaspoon

Procedure:

Place 6 muffin paper liners in a muffin tin.

Sift flours, baking powder, salt and cinnamon together into a large bowl and stir in the sugar and chopped apples.

Place the milk, egg and butter in a separate bowl and mix.

Add the wet ingredients to the dry ingredients and gently stir until just combined.

Divide the batter evenly between the paper liners.

To make the topping, mix sugar, butter, flour and ground cinnamon and sprinkle over the muffins.

Bake in a pre heated oven, 200ºC/ 400ºF, for 20-25 minutes, or until well risen and golden.

Remove the muffins from the oven and serve warm or place them on a wire rack to cool.
